Vegan Cheese Made from Sprouted Garbonzos

Ingredients:

1 C garbonzo beans, sprouted
1/4 C garbonzo bean water
2 Tb organic coconut milk or vegenaise
1Tb nutritional yeast flakes
salt to taste

1. To sprout garbonzo beans, soak dried beans for 12 hours, then rinse in a colander and rinse again every 6-8 hours. After 12 hours in the colander, the beans are sprouted releasing their nutritional value.

2. Boil/steam sprouted beans for 5-10 minutes, to soften the texture (boiling destroys some of the nutritional value, but in this case, I want a certain texture for the dish). Reserve the water the beans were boiled in.

3. Put beans, reserved water, and the rest of the ingredients listed above in a blender or food processor. Salt to taste and add more coconut milk or water if necessary. Blend until you get the desired texture that you want. I prefer it chunky and thick. You can use it like cheese to top many dishes, salads, etc.

The taste really was surprising how much it was like cheese!
