Tomato, Basil, "Mozarella" Stacks


This is an easy appetizer, salad, snack, or whenever meal for a vegan on-the-go.

Ingredients:
Tomatoes
Fresh Basil
Seasoned Firm Tofu or Vegan Gourmet Cheese Alternative
Olive Oil
Salt

1. Slice tomatoes and tofu/cheese 1cm thick.
      If you are using tofu, you can season the tofu with salt, mushroom seasoning/nutritional yeast/vegenaise
2. Stack tomato, tofu/cheese, and basil. Drizzle olive oil and salt.
3. Enjoy!

For a truly gourmet flair, try drizzling chili oil and topping the stacks with a bit of sweet potato and tomato paste, as seen in the picture.
