Today's special is my play on a local classic...mung (mongo) beans w/kabucha squash and wild moringe...served on a bed of organic wild rice.
This is a post valentine's lunch...most of have binged on the weekend...so we want to be easy on our bodies. One way of doing this is by sprouting food. When we sprout food, we enhance the nutrition. This is so, because we strip off the enzyme inhibitors when we sprout something, in this case, our mung beans. So we're basically taking a dormant legume, and bringing it to life...this is one way to ensure, that you are getting a ramped up nutritional profile.Again, we try to be as gentle as possible with our food...our kabucha is lightly steamed with sea salt, our mung beans are lightly simmered in our spice blend...the heat source is shut off, then we fold in some organic coconut milk (you never want to boil coconut milk...it causes seperation), and then we add raw moringe. Our moringe grows wild, and is picked that same morning... a little bit about this plant...it is loaded with nutrition (esp. minerals)...but what I really like about this plant is its medicinal properties (that's why we don't want to denature it w excessive heat). It's very alkalizing, and known to boost the immune system. Because of it's slightly bitter qualities (alkaloids), it's also beneficial for stabilizing blood sugar levels...and is a known anti-inflammatory.see you @ da caf...Marcp.s. here's what's coming down the pike...our dharma cards are finally in. This is our way of saying thank you for supporting our vision of bringing alternative foods/nutrition to the mainstream. We're contemplating holding a raw class (possibly in March)...stay tuned (coming soon to a theatre near you). If we collectively manifest this hard enough...maybe even a vibrant/conscious living buffet night....ya never know what these crazy kids'll come up with next.
